Dairy products produced for human consumption typically undergo a number of different processes. Once, called Pasteurization, is the process of heating milk for a short time, to kill harmful micro-organisms, followed by cooling for storage and transportation. Pasteurized dairy products are still perishable and must be stored cold by both suppliers and consumers. Dairy products must be sold by specific expiration dates written on each container by the dairy. A complementary process for commercial milk is homogenization, which produces milk in a single phase (or layer). This is accomplished by mechanically reducing the fat globules to a size that stabilizes them in solution.
