Soul food, commonly thought of as food preferred by African Americans of the south, has increased in popularity throughout the U.S. population. Many soul food restaurants exist, ranging from simple fish or chicken shacks to fine dining establishments. Soul food originated in the Southern states, and is thought to have emerged during the time of slavery when slaves lived in difficult, often impoverished conditions. Soul food is humble, hearty fare. Traditionally, soul food is cooked and seasoned with pork products, and fried dishes were usually cooked with either lard or hydrogenated vegetable oil. Many of the ingredients to prepare soul food can be purchased at virtually any grocery store, but some soul food items might only be able to be found at a soul food specialty shop.
