Outdoor cooking is a culinary specialty and involves a lot more than just your basic BBQ grill. Here are some terms with which to become familiar if you're thinking of expanding your gas or charcoal grill.

  • Smoker - There are many different models of smokers on the market today. Some smokers are charcoal based and can attach to the side of your existing grill. Other models are more portable and use electricity rather than briquettes. Digital technology is available as well for monitoring meat as it smokes.
  • Rotisserie - A rotisserie is an electric cooking device that holds meat on a spit. The spit then continually and constantly rotates over the heat source for even cooking.
  • Fire Pits - A fire pit is any type of metal container that is used in grassy areas to safely contain fire. They can be used for roasting marshmallows or hot dogs from a stick.
  • Hibachi - A hibachi can refer to a variety of cooking devices. Traditionally, it's a container that holds charcoal for cooking. Modern usage also refers to flat, gas or electric powered cooktops.
  • Pulled Meat - Cooking pork, chicken, or beef over low heat for several hours creates a very tender final product. The meat can then be shredded, or pulled apart, with a fork.
  • Rub - A rub is a mix of spices and seasonings that is literally rubbed onto the meat during cooking. It's often blackened in the process and produces intense flavoring.
  • Brine - Mixing water with salt creates brine. Placing rotisserie or barbecue bound chicken in brine before cooking creates great flavor.
  • Brisket - Brisket is a cut of beef that is often cooked with a barbecue and BBQ sauce. Brisket is often cooked slowly for a moist cut.
