There are millions of Americans that barbecue and grill outdoors every year. This fun tradition requires certain equipment, BBQ supplies, and meats. While some people still use a charcoal grill, many others have switched to an electric or gas unit. There are also meat smoking supplies or units that can be utilized. It really just depends on personal preference. Here you will find some useful terms and definitions to expand your knowledge of barbecue equipment and grilling supplies.

  • Cold Smoking – This is when smoke is applied to food. The smoke is between 90 and 120 degrees Fahrenheit, and can be used to flavor meats, cheese, and fish. This is a delicate process because dangerous microbes can form if the temperature is off.
  • Planking – A combination cooking method for preparing meats like salmon. A cedar wood plank is often used for its aroma, but is soaked in water beforehand. The meat is simply placed on the plank, and then in a closed oven. Steam and flavor are then delivered into the meat while it cooks.
  • Whitebone – This refers to ribs when they are overcooked in an oven, pit, or grill. When the ribs are pulled apart, and the meat pulls completely off of one bone, leaving it white, the meat was cooked too long.
  • Texas Rub – A seasoning mixture that is made from only salt and pepper. It is typically added to meat like beef or pork, but without a heavy BBQ sauce.
  • Smoke Ring – A pinkish ribbon of color that appears on the edges of meats. This is commonly seen when you barbecue outdoors on a charcoal or gas grill. A smoke ring is often seen in meats that are properly smoked, roasted or grilled.
