Terms to Know Regarding Meat Products

Meat products come from all types of livestock, including beef, pork and poultry. They are typically sold in different cuts that come from various parts of the animal. Each cut has a different flavor as well as different concentrations of fat to lean meat. Below are some common terminology related to meat products.

  • White Meat – Refers to the lighter colored, as well as healthier, meat from poultry like chicken and duck. Pork is often compared to poultry and is commonlu referred to as the other white meat.
  • Red meat – Mammal meat, that is traditional culinary terminology refers to meat that is red when raw and not white when cooked. The most common kind of red meat is beef.
  • Brisket – A low quality cut of meat that is taken from the chest of the front of the cow. Brisket meat is very tough and requires using slow cooking methods for grilling. This type of meat does make for excellent BBQ.
  • Steak – A cut of meat that can come from the sirloin area of the animal and is very high quality. Steak cuts are sold in large pieces and can be made from beef, pork and even more exotic types of meat, such as buffalo.
  • Poultry – Poultry products are made from the meat of birds. Typically, this includes chickens, quail and ducks, but it can also include poultry like turkeys and geese. Poultry can be bought whole, or can be sold in pieces, such as thighs, legs and breasts.
  • Venison – Venison meat comes from deer. It is a red meat like beef, but as venison is not a farmed meat it is seldom sold in grocery stores.
