Wholesalers butcher and package large quantities of meat, then market it in fresh or frozen form to retailers, including restaurants and supermarkets.   • Cuts - A particular slice of beef, pork, poultry or mutton that a butcher cuts from a specific part of the animal.   • Organic Meat - An official United States Department of Agriculture certification referring to meat produced without the use of hormones, antibiotics or other chemicals. Animals raised for organic meat eat organic feed and graze in pastures that are not sprayed with synthetic fertilizers or herbicides. Because of the extra care and cost involved with raising organic meat, it costs more than factory farmed meat.
