Tip #1: Match Your Pasta Shape to the Dish You’re Making
In general, remember that the thinner the pasta, the lighter the sauce. When cooking thicker flat strands such as fettucine, go with a heavier sauce such as Alfredo or basil-pesto. When cooking thin strands like spaghetti and angle hair pasta, go with light garlic, olive oil or puttanesca sauces that barely cover the strands. You never want to overpower thin spaghetti-like pasta with heavy sauces.

Tip #2: Avoid Overcooking
Avoid overcooking your pasta by following boiling directions down to the minute. When the timer goes off, shut it off and immediately drain the pasta through a colander. Al dente pasta is preferred by most people, but it may take a few times experimenting with cooking times to get that perfect timed pasta. Remember to write it down when you’ve achieved your favorite al dente cooking time.

Tip #3: Mix Pasta with Sauce in the Pan
You may be in the habit of serving pasta in individual bowls with individual toppings of sauce. Instead, put all the pasta in a large serving bowl, mix with the sauce gently, then let it sit for a few minutes to marinate the flavors. This allows the hot pasta to absorb the sauce, adding more flavor and depth to the overall dish. If you want to dress up the dish, sprinkle parmesan cheese or a sprig of basil.
