Spice companies supply all varieties of spices to add flavor to foods and recipes. Distributors offer bulk quantities and varieties, making them useful for restaurant owners, food manufacturers and at home cooks. Here are some popular terms you might encounter when buying spices:

  • Seasoning - A blend of dried flavorings, including herbs, spices, seeds, salt and other additions. Seasoning blends may be designed for specific applications, such as poultry or pumpkin pies.
  • Herb - The leaves of a plant, used for their aromatic and flavor properties. Popular herbs, used both fresh and dried, include basil, oregano, rosemary and thyme.
  • Ground - Dried spices and herbs that are ground to a powder like consistency. Ground spices are often combined to create seasoning combinations and can easily be mixed into recipes.
  • Seeds - The whole seeds of plants, used for their pungent flavor. Common seed spices include coriander, dill, poppy and mustard. You can find all types of seed from spice companies.
  • Scoville Heat Scale - A system of rating the heat, or sensation of a chili pepper or spicy sauce.
  • Saffron - A spice derived from a crocus flower. It is is highly valued as a flavoring for dishes. Saffron is actually the stigma of the flower, making it somewhat rare and expensive.
  • Spice - The concentrated oils extracted from spices, including aniseed oil, chili oil and cinnamon oil, among others. Spice oils, when consisting of strong spices such as chili, can be much more spicy than the non-concentrated version.
  • Essential - Extracted oil from a plant that contains a strong concentration of its flavor and essence. These include citronella, basil and rose oils, among others.
